sti testing, etc.

This may sound really stupid but humor me…
I’ve had sex with 3 men—two most certainly were STI-free, the other probably was but I’m not certain and we used condoms. I’ve been with 3 other men sexually, but we didn’t have sex. I go to the gynecologist annually, as I should, and have never had an abnormal pap. I don’t think I’ve ever specifically had an STI test, but I’ve never exhibited any symptoms. So…I should be STI-free, correct? If I had contracted something it would have been noticeable either to me or by my doctor at my exam a month ago, right? (I haven’t been with anyone since July.)
What about men? If a man has never had any symptoms, but has never been tested, should he be? How are they even tested?
Basically the issue at hand…If I get involved with someone, how do I KNOW that I can have sex with him without a condom?
