I had a similar situation about a year ago (well, I had a bad reaction between a new medication and alcohol, and ended up with a blackout I wasn't expecting, and wasn't entirely certain that the sex I had that day involved condoms.. so not quite like yours but similar worries.)
Planned Parenthood told me that chlamydia and gonorrhea tests would be accurate in two weeks, and current HIV tests are accurate in about three months. I don't know the incubation periods for other stuff but the link above me certainly does.
